Whoopie pies, Daring Bakers December 2013

In December 2013 the Daring Bakers made "Whoopie Pies", challenged by Bourbonnatrix of "Bourbonnatrix Bakes".
Whoopie pies are a cross between a cookie and a cake (not a pie!), with two round, mound-shaped halves sandwiching a sweet creamy filling. The traditional Whoopie pie consists of a chocolate cake and a vanilla marshmallow filling, but pumpkin and gingerbread cake is also common enough. Possibilities are endless!

I chose to make a triple chocolate whoopie, using a recipe from the book "Whoopie pies" by Mowie Kay. This book features christmas whoopies, gingerbread whoopies, mississippi-mud-whoopies and even tiramisuwhoopies!

The triple chocolate whoopies were delicious! Here's the recipe, first in English, then in Dutch.


Triple chocolate whoopies
For 12 whoopies

For the cakes:
150 grams (5.3 oz, 1.3 stick) softened unsalted butter
150 grams (5.3 oz, 0.75 cup) light brown caster sugar
50 grams (1.76 oz, 0.25 cup) fine granulated sugar
seeds of one vanilla bean
2 eggs
350 grams (2.8 cups, 12.34 oz) wheat flour
50 grams (0.6 cups,1.76 oz) unsweetened cocoa
1.5 teaspoon baking soda
1 teaspoon salt
150 ml (0.63 cups, 5.5 oz) buttermilk
50 ml (0.21 cups, 1.8 oz) whole milk

For the filling:
2 egg whites (or the equivalent in eggwhite powder with water)
125 grams (0.625 cups, 4.4 oz) fine granulated sugar
225 grams (2 sticks) softened unsalted butter
40 grams (1.4 oz, 0.5 cups) unsweetened cocoa

For the topping:
100 grams (3.5 oz) dark chocolate
dark chocolate chips (or other decoration)

1. Preheat the oven to moderate 180°C / 356 °F / gas mark 4. Cover two baking sheets with parchment paper or silicon mats.
2. Make the batter: in a large bowl, beat together butter, cater sugar, granulated sugar and vanilla, until smooth and airy. Add the eggs one by one and beat until smooth.
3. In another bowl, sift together flour, baking soda, salt and cocoa. Add half of these dry ingredients to the butter mixture and stir to combine. Add milk and buttermilk, stir to combine. Add the rest of the dry ingredients, and stir to combine.
4. Scoop 24 mounds of batter on your baking sheets, preferably using an ice scoop with release mechanism. Leave enough space between the cakes. Smooth the tops with damp fingers. Bake 12-15 minutes, or until the cake springs back when pressed. Let them cool completely on a rack.
5. Make the filling: combine egg whites and sugar in a heatproof bowl. Set the bowl over a pan with simmering water. Beat with a mixer until the sugar has dissolved, and the mixture is white and warm. Take the bowl off the pan and continue beating on high speed, until the bowl feels cooler to the touch.
Change speed to low and add the butter gradually. Add cocoa and gently fold it in with a spatula. Put the mixture in the fridge for 30 to 60 minutes.
6. Fill a piping bag fitted with a large star nozzle with the filling, and pipe filling on the flat side of a cake. Place a second cake with his flat side on top of the filling and press down slightly. This way make 12 whoopies. Smear a little melted chocolate on top of the woopies, and decorate with chocolate chips or any other decoration.


Driedubbele chocoladewhoopies
Voor 12 whoopies

Voor de koeken:
150 gram ongezouten roomboter (zacht)
150 gram lichtbruine basterdsuiker
50 gram fijne kristalsuiker
merg van 1 vanillestokje
2 eieren
350 gram tarwebloem
50 gram cacao
1 ½ theelepel zuiveringszout (natriumbicarbonaat)
1 theelepel zout
150 ml karnemelk
50 ml (half)volle melk

Voor de vulling:
2 eiwitten (of zelfgemaakt van eiwitpoeder)
125 gram fijne kristalsuiker
225 gram ongezouten roomboter (zacht)
40 gram cacao

Voor de topping:
100 gram pure chocolade (gesmolten)
donkere chocoladechips of andere decoratie

1. Verwarm de oven voor op 180°C. Bedek twee bakplaten met bakpapier of siliconen matjes. Maak het beslag: klop de boter, basterdsuiker, kristalsuiker en vanille tot een luchtig geheel. Klop de eieren er een voor een door.
2. Zeef in een aparte kom bloem, zuiveringszout, zout en cacao. Spatel de helft van deze droge ingredienten door het botermengsel. Roer de melk en karnemelk erdoor en daarna de rest van de droge ingredienten. Vul een spuitzak met ronde mond met het beslag en spuit op elke bakplaat 12 rondjes van 5 cm doorsnee met 5 cm tussenruimte. Bak de koeken 12 tot 15 minuten of tot ze terugveren als je erop drukt. Laat ze afkoelen op een rooster.
3. Maak de vulling: doe de eiwitten en suiker in een hittebestendige kom en zet die op een pan met zacht kokend water. Klop met de mixer tot de suiker is opgelost en het mengsel wit en warm is. Neem de kom van de pan en klop verder po hoge snelheid tot de kom begint af te koelen. Zet de mixer op de laagste stand en klop de boter er geleidelijk door. Schep de cacao erdoor e n laat de vulling 30 tot 60 minuten in de koelkast opstijven.
4. Vul een spuitzak met stervormig mondje met de vulling en spuit vulling op de platte kant van een koek. Druk er een tweede koek op. Maak zo 12 whoopies. Bestrijk ze met gesmolten chocolade en bestrooi ze met chocoladechip of andere decoratie.
